  • TOASTED ALMOND HERBED BROWN RICE
  • Yield: 4 to 6 servings
  • 1 cup uncooked brown rice
  • ¾ cup Fisher sliced almonds, toasted
  • large handful of fresh herbs, about 1 ½ cup (I used basil, parsley, oregano), roughly chopped
  • 2 tablespoons olive oil
  • juice from half of a lemon
  • big pinch coarse salt and fresh ground pepper
