Beans and Rice, Cuban
Ingredients
  • 1 cup dried black beans
  • 2 bay leaves
  • 2 tsp. kosher salt
  • 3 slices bacon, coarsely chopped (about 100 g)
  • 1 yellow onion (7 oz), diced
  • 1 green bell pepper (7 oz), seeded and diced
  • 3 cloves garlic, minced
  • ½ tsp. ground cumin
  • ½ tsp. dried oregano
  • 1 cup long-grain white rice
  • 1¾ cups store-bought or homemade chicken stock
