One Pan Vegetarian Mexican Taco Skillet
Ingredients
  • 1 tablespoon olive oil
  • 1 yellow onion diced
  • 3 cloves garlic pressed
  • 2 red bell peppers diced
  • 2.5 teaspoon chili powder
  • 2 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon oregano
  • 1 cup dry quinoa
  • 2 cups low sodium vegetable broth
  • 2 cups salsa
  • 1x 540 mL can black beans rinsed and drained
  • 1 cup frozen corn (canned corn will also work)
  • 3 cups spinach (1 cup defrosted frozen spianch will also work)
  • ¼ cup cilantro chopped (optional)
  • 1.5 cups cheddar cheese shredded
