Vegan Sweet and Sour Chickpeas
Ingredients

  • 1 medjool dates *
  • 2 tablespoon tomato paste
  • 2 teaspoon apple cider vinegar
  • ½ teaspoon garlic powder
  • 2 teaspoon corn starch
  • ¾ cup water
  • salt to taste
  • subheading: Veggies and chickpeas:
  • 1 15 oz can chickpeas, rinsed and drained ( or 1 ½ cups cooked chickpeas )
  • 2 cloves garlic, minced
  • 1 small red onion, diced
  • ½ red pepper, diced
  • ½ cup diced pineapple
  • 1 tablespoon soy sauce ( sub for tamari if gluten-free )
