Coconut Braised Chickpeas with Spinach & Sun-Dried Tomatoes
Ingredients
  • 1 large onion, diced
  • 1 tbsp 1 tsp garlic, minced
  • 1 tbsp ginger, fresh, minced
  • 1 lemon, zested, juiced
  • ½ c sun-dried tomatoes, julienned
  • 1 - 15 oz. can chickpeas, drained, rinsed
  • ½ tsp crushed red chili flakes
  • 6 oz. baby spinach
  • 1 - 14 oz. can lite coconut milk
  • ½ tsp ginger, ground
  • ¼ c cilantro, chopped, garnish
