Sheet Pan Za’Atar Chicken Dinner with Roasted Chickpeas & Tahini Sauce

  • 3 cups broccoli cut into small florets
  • ¼ red onion cut into large slices
  • 1 ½ tablespoons olive oil
  • ¼ tsp sea salt
  • black pepper
  • 1 cup chickpeas drained and rinsed
  • ½ tsp sweet paprika
  • 2 skinless boneless chicken thighs see notes to use another cut of chicken
  • 1 tbsp za’atar spice mix
  • 1 tbsp lemon juice
  • subheading: Tahini Sauce:
  • ½ cup tahini paste
  • 1 small garlic pressed or minced very thinly
  • ¼ cup lemon juice
  • ½ cup ice water
  • ¼ tsp sea salt
  • pinch of cumin
