Parker's Brunswick Stew
Ingredients
  • 1 5-pound (roughly) whole chicken (cut into pieces)
  • 1 ⁄ 2 to 1 pound of cooked, pork BBQ - chopped (optional - but best if added)
  • 1 pound frozen baby lima beans (or butter beans for Southern purists like me)
  • 1 pound frozen corn
  • 8 to 10 medium red potatoes-diced (large dice)
  • 1 8-ounce can of tomato sauce
  • 64 ounces of chicken stock
  • 2 4-ounce cans tomato paste
  • 1 ⁄ 2 stick butter
  • 1 ⁄ 4 to 1 ⁄ 2 cup apple cider vinegar
  • 1 ⁄ 8 to 1 ⁄ 4 cup Texas Pete
  • 1 ⁄ 4 cup catsup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon of pepper
