Fresh Corn and Tomato Salad
Ingredients
  • 6 ears of fresh corn on the cob, peeled and cleaned see note for using frozen or canned corn
  • 2 garlic cloves minced
  • 4 tablespoons extra virgin olive oil divided (one tablespoon for the skillet, three for the salad’s dressing)
  • ½ cup fresh basil julienned
  • 2 cups tomatoes chopped
  • 2 tablespoon red wine vinegar
  • Salt and freshly ground pepper
