Grilled Veggies Couscous Salad
Ingredients
  • ¼ cup apple juice
  • ¼ cup soy sauce or tamari*
  • ¼ cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 3 ears of corn, husks and silk removed
  • 3 zucchini, cut into thick rounds
  • 5 fist sized tomatoes (about 2 pounds), cut into bite-sized chunks
  • 4 cups cooked, whole wheat large pearl couscous**
  • 1 ½ cups roughly torn fresh basil leaves
  • spray oil
