Pickles and Salmon Grain Bowl
Ingredients
  • ¼ cup quinoa, rinsed
  • ⅓ cup water
  • salt
  • 1 cup packed, roughly chopped spinach
  • 1 4-ounce piece wild salmon
  • 1 teaspoon olive oil
  • ¼ avocado, thinly sliced
  • ¼ sheet nori, cut into thin strips
  • ¼ cup roughly chopped kimchi
  • 1 teaspoon toasted sesame seeds

  • 1 Armenian cucumber
  • ½ teaspoon salt
  • ½ teaspoon coconut sugar (or whatever sugar you have)
  • ¼ teaspoon very finely grated fresh ginger (optional)
  • 1 tablespoon red wine vinegar
  • water to cover

  • splash sesame oil
