  • 5 cups broccoli florets
  • 1 large red bell pepper, diced
  • 2 cups (270g) corn

  • 2 red bell peppers or 2 heaping cups (260g) chopped
  • ⅛ teaspoon chipotle chile pepper spice
  • 1 tablespoon coconut aminos
  • 2 tablespoons lemon juice
  • ¼ cup cooked and packed mashed potato
  • ¼ teaspoon fine salt
  • ½ to ¾ cup water (depending on desired consistency)
