Ingredients
  • 3 lbs stew beef (or chuck roast or short ribs, see note below), cut into chunks
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp white rice flour (optional)
  • 2 tbsp ghee
  •  
  • ½ onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • ¾ cup red wine (Zinfandel, Merlot, Cabernet Sauvignon)
  • 3 cups beef broth
  • 3 carrots, peeled and cut into chunks
  • 3 parsnips, peeled and cut into chunks
  • 3 celery stalks, cut into chunks
  • 1.5 lbs waxy potatoes (red, golden, etc), cut into chunks
  • 3 sprigs fresh thyme (½ tsp dried okay)
  • salt and pepper to taste
  • 1 small handful parsley, chopped
