Lemon curd recipe:

The curd is a great way to use up the yolks from your 6 eggs. I added the pulp of one passion fruit to my curd and it worked out great.

Ingredients
  • 6 egg whites
  • 1 tspn white vinegar
  • 1 tspn vanilla essence
  • 4 tbsps Natvia (powdered in a food processor
Steps
  1. Beat egg whites until stiff peaks form.
  2. Switch beater to low speed and slowly add 1 tbspn of Natvia at a time.
  3. Add vanilla essence and vinegar, keep beating on low until combined.
  4. Scoop onto lined and greased baking tray, shape to preference.
  5. Bake at 180C for first 5 mins, then turn down to 150 and bake for an additional 30 to 40 mins (or until golden).
