Cake - Healthy Breakfast Cake! Sweet Potato and Apple
Ingredients
  • 1 ¼ cups sweet potato, cubed
  • 1 ¼ cups apple, cored & cubed
  • 1 cup milk (any type)
  • 2 large eggs
  • ¼ cup maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 ½ cups rolled oats or quick oats
  • 2 tablespoons nuts for garnish (cashews recommended)
  • 2 tablespoons coconut flakes for garnish (optional)
  • Cooking spray for greasing
