  • 500 to 600 g of pork of choice (preferably with some fat marbling), thinly sliced
  • ½ c - 1 (80 g) tbsp brown sugar
  • 2 ½ tsp (17 g) fine sea salt
  • 3 large cloves garlic, minced (About 1 tbsp)
  • 1 tbsp (15 ml) soy sauce
  • 1 tbsp (15 ml) rice vinegar
  • 2 tbsp (30 ml) apple cider vinegar
  • 1 tsp ground black pepper
  • 1 ½ tsp rice flour
  • 1 tsp Annatto powder or red food coloring, optional
