Healthy Carrot Bread
Ingredients
  • 3 eggs
  • ⅓ cup unsweetened apple sauce
  • ¼ cup cup honey
  • 2 tablespoons avocado oil or coconut oil melted
  • 1 teaspoon vanilla extract
  • 2 cups 200 grams almond flour
  • 2 tablespoons 15 grams coconut flour
  • 1-½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • Pinch fine sea salt
  • 1 cup grated carrots from about 2 medium carrots

  • ½ cup raisins
  • ½ cup mini chocolate chips
  • ⅓ cup walnuts or pecans chopped

  • ½ cup organic powdered sugar
  • 1 tablespoon maple syrup
  • 1 to 2 tablespoons almond milk
  • ½ teaspoon maple extract optional
