Balkan Djuvec Rice (Instant Pot)

This is an adaptation of the balkan rice dish Djuvec rice, which is traditionally served with cevapcici.

Ingredients
- ½ large yellow onion, chopped
- 1 red bell pepper, diced
- 3 cloves or garlic
- 1 tbsp oil
- 350g basmati rice
- 8 oz tomato sauce
- 10 oz water
- ½ lb ground meat
- 2 packages goya salon
- ½ pack frozen green peas
- 2 tsp better than bouillon
- ¼ to ½ cup Ajivar
- salt and pepper to taste
Steps
- Heat IP on Saute till HOT.
- Sauce onion, then add garlic and red bell pepper. Continue sautés for a few more minutes. Add ground beef and cook for a bit till no longer raw.
- Add the remaining ingredients and stir to combine. (defrost the frozen peas or the dish will be a tad undercooked and cooler than usual)
- close to lid and select pressure cooking and cook on high for about 5 min, then NPR for 10 min.
- Release remaining pressure and enjoy.
Notes
- Defrost the peas.
- Leave out the meat if desired.
- For the Better than Bouillon and ajivar is the technical term "blob" since i generally dont measure them but the measurements listed are very appropriate.
- Aijvar is a balkan condiment made from red peppers and egg plant and can be found on amazon or local mediterranean shops. It comes in mild and hot and i generally use the mild variety.
- Stove top version would be similar to above except you cook it on medium low for about 20 min till the rice is done and add the peas about 5 min prior to end of cooking time.
