Spelt Banana Bread

Ingredients
  • 1½ cups spelt flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • 1 stick (½ cup) unsalted butter, at room temp
  • ¼ cup coconut sugar
  • 2 eggs
  • 1½ cups mashed bananas (3 to 4 very ripe)
  • 1 tsp vanilla extract
  • ½ cup chopped toasted walnuts (optional)
  • ½ cup date pieces or golden raisins (optional)
Steps
  1. Preheat oven 350 degrees. Grease 8½x4½ inch loaf pan with butter.
  2. In large mixing bowl, combine flour, cinnamon, baking soda, and salt.
  3. In separate mixing bowl, use mixer to beat together butter and sugar until combined. Add eggs and continue to beat for 1 minute. Add bananas and vanilla and beat just until combined.
  4. Pour wet ingredients over dry and stir until combined. Fold in walnuts or dates if using.
  5. Pour into loaf pan and shake to spread batter evenly.
  6. Bake until top is golden, 50 to 60 minutes.
  7. Transfer pan to wire rack and cool for 15 minutes.
Notes
  • Can also make as muffins.
