Ingredients
  • 2 cloves garlic, peeled
  • 1 onion, peeled and quartered
  • ½ carrot, peeled and cut into chunks
  • 1 celery stick, cut into chunks
  • 20g cooking oil
  • 250g basmati rice, rinsed
  • 2tsp cumin seeds
  • 5 cardamom pods
  • 1 star anise
  • 1 cinnamon quill
  • 2 bay leaves
  • 2 dried chillis, crumbled
  • 2tsp turmeric powder
  • 1tsp paprika powder
  • 1tbsp tomato paste
  • 2 tsp salt or homemade chicken stock powder
  • 50g raisins
  • Approx. 1300g water (to the same level as the rice)
  • 50g pine nuts, toasted
