One Pan Italian Shrimp and Rice
Ingredients
  • 2 tablespoons olive oil

  • 1 (400g) can cherry tomatoes, drained, such as corbani
  • 1 ½ teaspoons kosher salt, divided
  • 1 cup arborio rice
  • 1 ½ cups vegetable broth
  • ½ cup water
  • 1-pound large shrimp, peeled and deveined, 26/30’s
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes, or more, to taste
  • 2 cups packed roughly chopped baby spinach
  • ⅓ cup chopped basil
