Gluten Free General Tso's Chicken

  • 3 tablespoon tamari or gluten free soy sauce
  • 3 tablespoon sugar
  • 2 tablespoon cornstarch
  • 1½ cups (360 ml) water
  • 1 tablespoon canola or vegetable oil
  • 4 garlic cloves, minced
  • 2 tablespoon freshly grated ginger
  • ½ teaspoon crushed red pepper flakes more or less to taste
  • 1 pound (454 g) boneless skinless chicken breasts, cut into cubes chicken thighs may be substituted
  • subheading: Coating & Frying:
  • 3 large egg whites
  • ¾ cup (90 g) cornstarch
  • ¼ cup (35 g) Kim's all purpose gluten free flour blend
  • ¼ teaspoon baking soda
  • 4 cups (1 gallon or 896 ml) canola or vegetable oil
  • 1 to 2 green onions, thinly sliced optional garnish
