John Torode's Autumn Cottage Pie
Ingredients
  • 2 large carrots, finely chopped
  • 4 sticks celery, finely chopped
  • 1 leeks, finely chopped
  • 2 medium onions, finely chopped
  • 2 cloves garlic, chopped
  • 1kg minced beef - not too fine or fatty
  • ½ bunch thyme
  • ½ bunch rosemary
  • 50g flour
  • 500ml beef stock
  • 250ml red wine
  • 2 bay leaves
  • Worcestershire sauce and brown sauce, to taste
  • subheading: For the potato topping:
  • 1kg potatoes, peeled and boiled
  • 20ml olive oil
  • Bunch of flat parsley, chopped
  • Salt and freshly ground black pepper
  • subheading: To serve:
  • Tomato ketchup
