Garbanzo Aguachile Verde
Ingredients
  • 1 cup freshly squeezed lime juice (from 8 to 12 limes)
  • 1 cup cilantro leaves and tender stems (about ½ bunch), plus more for serving
  • ¼ medium white onion, thickly sliced
  • 1 small or medium serrano, halved (and optionally deseeded for less heat)
  • 3 garlic cloves, peeled
  • 1 teaspoon soy sauce
  • 1 tablespoon extra-virgin olive oil, plus more for serving
  • ½ teaspoon white miso
  • 2 (15-ounce) cans garbanzo beans (aka chickpeas), drained and rinsed
  • ½ English cucumber
  • ½ medium red onion
  • Saltines or tostadas, vegan mayo, and/or sliced avocado, for serving
