Almond Roca
from Aunt Dee (?)
Ingredients
  • 1 lb butter
  • 2 cups sugar
  • 1 cup almonds, slivered
  • candy thermometer
Steps
  1. Combine butter & sugar.
  2. Heat slowly, stirring constantly (until sugar is dissolved)
  3. Cook to hard crack stage 310° (checking with candy thermometer)
  4. Stir occasionally to prevent scorching
  5. Pour into buttered cookie sheet (with lip?)
  6. When cold, melt chocolate over boiling water until melted.
  7. Spread half of chocolate over candy
  8. Spread with almonds
  9. When set, turn over and spread remaining chocolate & nuts
  10. When firm break into chunks.
