Black Beans and Rice
Ingredients
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • ¾ cup uncooked rice
  • 1 ½ cups vegetable broth
  • 1 tsp ground cumin
  • ¼ tsp cayenne pepper
  • 3 ½ cups black beans, drained
Steps
  1. Heat your oil in a stockpot over medium-high heat
  2. Add onion and garlic, sauté for 4 minutes
  3. Add rice and sauté another 2 minutes
  4. Add broth and bring to a boil
  5. Lower heat and cook for 20 minutes
  6. Add spices and beans just before serving
