Almond Butter Tofu
Ingredients
  • ¾ cup sushi rice
  • 1 garlic clove, peeled and minced
  • 1 oz fresh ginger, peeled and minced
  • 2 tbsp almond butter
  • 2 tbsp tamari
  • 1 tsp turbinado sugar
  • 1 tbsp sesame oil
  • 2 tbsp chile garlic sauce (divided)
  • 2 carrots, peeled and sliced into rounds
  • 4 oz rainbow Swiss chard, leaves roughly chopped and stems thinly sliced
  • 14 oz organic extra firm tofu, drained, patted dry and cut into bite-size pieces
  • 1 radish, cut into matchsticks
  • 2 tbsp vegetable oil*
  • Salt and pepper*
