Ingredients
  • Marinade
  • ½ c olive oil
  • ½ c red wine vinegar
  • ½ c medium dry sherry
  • juice of 2 lemons
  • 3 tsp ketchup
  • 1 medium onion-chopped
  • 2 tbsp parsley-chopped
  • 1 tbsp fresh mint-chopped
  • 1 tsp rosemary
  • 1 tsp white pepper
  • 1 tsp paprika
  • ½ tsp sage
  • ½ tsp chili powder
  • 1 tbsp salt
  • coarsely-ground black pepper to taste
  • 3 lbs meat, cut into 1 inch cubes. (Pork Shoulder and Lamb are traditional, but beef and chicken work well, too!)
  • Italian hoagie rolls or pita bread
