30-Minute Pasta E Fagioli
Ingredients
  • One 28-ounce can whole tomatoes
  • 2 tbsp. Extra-virgin olive oil
  • 1 tbsp. unsalted butter
  • 3 oz. pancetta, finely chopped
  • 1 medium onion, finely diced (about 1 cup)
  • 6 medium cloves garlic, minced
  • ½ tsp. Dried oregano
  • ½ tsp. Red pepper flakes
  • 4 cups homemade or low-sodium canned chicken stock
  • Two 15-ounce cans red kidney beans, with their liquid
  • 2 bay leaves
  • 1 cup small pasta, such as shells, ditali, or elbows
  • Kosher salt and freshly ground black pepper
  • 2 tbsp. Chopped fresh parsley
