Carrot-Spice Cake with Caramel Frosting

A native of Cleveland Ohio and I love to cook and entertain. As a full time RVer, I have limited kitchen space, but that doesn’t stop me from cooking up a storm! Recently worked as Activities Director for an RV resort on Florida where I was able to serve up some of my favorite recipes to our residents and guests.

1 package spice cake mix (regular size)

1 package (3.4 ounces) instant vanilla pudding mix

4 large eggs

¾ cup water

½ cup sour cream

¼ cup canola oil

1 cup shredded carrots

1 can (8 ounces) unsweetened crushed pineapple, drained

½ cup sweetened shredded coconut

½ cup chopped pecans

¼ cup raisins

subheading: FROSTING:

1 cup butter, softened

1 package (8 ounces) cream cheese, softened

6 cups confectioners' sugar

½ cup caramel ice cream topping

1 to 2 tablespoons 2% milk
