Fody's Pumpkin Minestrone Soup
Ingredients
  • 2 tbsp Fody’s Garlic Infused Olive Oil
  •  
  • 1 large carrot, diced
  • 1 cup green beans, cut into ½” pieces
  • 1 cup kale, finely chopped
  • 1 cup Fody’s Marinara Sauce
  • 1 cup pumpkin puree
  • 14oz can fire roasted tomatoes
  • 1 cup kabocha squash, cubed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried sage
  • ½ tsp black pepper
  • ¼ tsp salt
  • 6 cups low fodmap friendly chicken or veggie broth
  • ½ can kidney beans, drained & rinsed
  • 1 ½ cups gluten free shell pasta
  • ⅓ cup grated parmesan cheese, for topping
  • 1 tbsp fresh chopped sage for serving
