Cashew and Pork Stir-Fry
Ingredients

  • 1 ½ pound pork tenderloin, cut into ¼-inch strips
  • 2 medium yellow onion, cut into 8 wedges
  • 2 cloves garlic, minced
  • 4 ounces fresh mushrooms, sliced
  • 2 medium red bell pepper, seeded and cut into squares
  • ½ cup cashews
  • 3 cups raw white rice, cooked as directed on package
