  • 3 thick-cut bacon slices
  • 1 tbsp olive oil
  • ¾ cup low fat Greek yogurt
  • 1 tsp lemon juice,
  • ½ tsp dijon mustard
  • ⅓ cup low-fat milk
  • ¾ tsp salt
  • ¼ tsp pepper
  • ½ tsp onion powder
  • 1 cup chopped cherry tomatoes
  • ¼ cup minced red onion
  • 2 tbsp chopped fresh parsley
  • micro greens
  • 15 salted rice crackers

  • note: Note:I boiled 2 chicken breasts until fully cooked and then shredded the chicken, but feel free to sub with shredded rotisserie chicken.
