Haddock and Lentil Stew with Green Salsa
Ingredients
  • 1 tbsp olive oil
  • 2 onions, finely chopped
  • 2 tsp turmeric
  • 2 garlic cloves, finely chopped
  • 350g baby potatoes, diced
  • 2 x 250g packs ready-cooked puy lentils
  • 700ml hot vegetable stock
  • 500g skinless haddock
  • subheading: For the salsa:
  • 2 garlic cloves, crushed
  • 2 tsp capers, roughly chopped
  • 4 anchovies, drained and chopped
  • 2 tbsp red wine vinegar
  • 1 tbsp extra-virgin olive oil
  • 100g flat-leaf parsley, finely chopped
  • 100g coriander, finely chopped
  • 100g mint, finely chopped
