  • 6 tablespoons unsalted butter
  • Freshly ground black pepper
  • 1 ½ pounds mixed mushrooms, such as creminis, oysters, and stemmed shiitakes, cut into ½-inch dice
  • 1 tablespoon minced fresh ginger
  • 2 tablespoons finely chopped chives
  • Kosher salt
  • 4 (½-inch-thick) boneless sirloin steaks (about 6 ounces each)
  • 2 tablespoons vegetable oil
