Brown Butter Mashed Potatoes
Ingredients
  • 4 lb Yukon Gold potatoes, scrubbed, peeled, and cut into 1-to-1 ½-in cubes (about 13 cups)
  • 12 Tbsp (1 ½ sticks) unsalted butter
  • 1 cup half-and-half
  • 1 cup sour cream, buttermilk, or crème fraîche, at room temperature
  • 2 ½ tsp kosher salt, plus more for boiling
