Butter Cookies w/ Brown Sugar Icing:
1960's school cafeteria recipe
Ingredients
  • 1 cup vegan butter, or margarine, softened
  •  
  • ½ cup sugar
  •  
  • 1 tbsp. vanilla extract
  •  
  • 2 cups all-purpose flour
Steps
  1. Preheat oven to 375° line baking sheet with parchment paper or silicone liner.
  2. Add butter and sugar to mixing bowl and cream together on medium-high speed until it is light and fluffy.
  3. Scrape down the sides of bowl and mix in the vanilla.
  4. Add flour and mix just until combined.
  5. Scoop dough with a 1 oz. scoop or use a tablespoon to scoop the dough.
  6. Place on the prepared baking sheet. Bake for 15 to 18 minutes or until the edges of the cookies begin to turn golden brown.
  7. Let the cookies cool on the pan for 5 minutes and then move to a wire rack to finish cooling.
  8. *Ice with Brown Sugar Icing*
Notes
  • There is a lot of butter in these cookies, the more you handle the dough the more it melts. I use a scoop. If that's not an option, roll very quickly into a ball using your hands.
