Rum and Raisin cheesecake Instant Pot
Ingredients
  • 10 digestive biscuits
  • 50g unsalted butter melted
  • Filling
  • 600g cream cheese (I use Philadelphia)
  • 2tblsp plain flour
  • 175g caster sugar
  • ½ tsp vanilla extract
  • 2 large eggs & 1 egg yolk beaten
  • Small pot of soured cream
  • 40g raisins soaked overnight in 2tblsp rum
