Devil’s Food Cake with Seven Minute Frosting

  • The following is chosen because as a child I always had a homemade Devil’s Food Cake with Seven Minute Maple Frosting as a birthday cake. My mother had the art of creating the perfect Seven Minute Frosting down to a science. This is from the kitchen of Mrs. Earl Warren, wife of the Chief Justice. This is a cake with both a filling and a frosting.

  • ¼ pound of butter (one stick)
  • 2 cups of sifted cake flour
  • 1 cup granulated sugar
  • 1 tsp. baking soda
  • 1 cup brown sugar
  • pinch of salt
  • 1 cup buttermilk
  • 1 tsp. vanilla
  • 6 egg yolks, well beaten with 3 tbsp. of cold water
  • 3 squares of Baker’s Bitter Chocolate, melted
  • subheading: Seven Minute Frosting:
  • 2 egg white
  • 1½ cup granulated sugar
  • 1 tsp. vanilla
  • 1½ cup Karo light syrup
  • 5 Tbsp. cold water
  • subheading: Chocolate Frosting:
  • 1 pound of confectioner’s sugar
  • ½ cup cocoa
  • 1 tsp. vanilla
  • ⅓ cup strong coffee
  • 2 Tbsp. of melted butter.
