Lupin Flour Pancakes
Ingredients
  • 2 TBSP mayo
  • 2 large eggs
  • 2 TBSP lupin flour
  • ¼ tsp baking powder
  • a few drops of sweetner to taste
  • 1.5 carbs per pancake recipe

  • 1 egg
  • 2 TBSP mix of oat fiber & whey isolate (1 TBSP each)
  • 2 TBSP sour cream
  • ½ tsp salt
  • ¾ tsp baking powder
  • splash of water if needed to thin the batter (to your liking)
  • sweetner & flavoring of choice (optional)
  • 2.2 net gram carbs per recipe
Steps
  1. Beat egg, sour cream, oil, water (if needed) and sweetnener together. In another bowl, mix lupin flour, whey isolate & oat fiber, salt, and baking powder together then add to wet ingredients and stir until well mixed.
  2. Heat greased frying pan over medium  heat until hot (but not smoking). Add pancake mixture, creating 2 small or 1 large pancake. Cook  until bubbles form on top and you can see the edges starting to get golden. Turn over and cook until golden on both sides
