Crispy Filet O’ Fishless Sushirittos
Ingredients
  • 1 cup white or brown rice, steamed
  • 4 Good Catch Plant-Based Fish Fillets (two boxes) - two fillets per burrito
  • 1 cup fresh peas, blanched (frozen is also fine, just rinse in warm water first)
  • 1 Tbsp fresh mint, ripped into bits
  • ½ lime, juiced
  • ¼ cup eggless mayo (of course we like Wicked Kitchen Bac-No-Naise or our Garlic Mayo With Caramelized Onion)
  • 1 tsp to 1 Tbsp chili paste (depending on how hot you like it)
  • ¼ tsp Old Bay seasoning
  • 1 cup cucumber, cut into matchsticks
  • 2 large whole wheat tortilla wraps
