Bodding (Breadpudding)
Ingredients
  • 10 slices of old white bread smeared with butter
  • 4 eggs
  • 4 egg yolks
  • ½ litre of milk
  • 2 cups sugar powder
  • 1 handful of raisins soaked in cognac
  • nutmeg
  • butter cubes
Steps
  1. Bring the milk to the boil. Put the eggs plus the extra yolks with the icing sugar in a bowl and beat loose. Add the warm milk little by little and then put the whole mixture back in the pan and cook gently. DON'T BOIL ANY MORE. Then shuffle the pudding.
  2. Cut the white bread into triangles. Put a layer of roof tiles in a buttered oven dish. Sprinkle some raisins on top of it and close with a layer of bread, custard and raisins. Sprinkle nutmeg on top and some sugar. On each piece of bread a small knob of butter.
  3. Place in an au bain marie baking dish in a preheated oven at 180º C and fill ¾ with warm water. 35 to 40 minutes.
