Kratiem Prik Thai Short Ribs with Quick-Pickled Carrots

  • 1 bunch small carrots, peeled and halved lengthwise
  • ¾ cup unseasoned rice vinegar
  • 2 teaspoons honey
  • ¼ teaspoon sea salt
