PUMPKIN CINNAMON ROLL MUGCAKE
Ingredients
  • subheading: Roll:
  • ⅓ cup Carbquik mix
  • 2 tbsp milk sub
  • 2 tbsp pumpkin purée
  • 1 tbsp brown sweetener
  • subheading: Filling:
  • 1 tbsp butter, melted
  • cinnamon
  • sweetener
  • subheading: Topping:
  • 2 tbsp cream cheese
  • sweetener to taste
Steps
  1. Mix ingredients together
  2. Roll out to a long strip between two pieces of wax paper. If the mixture is too sticky, dust the paper with Carbquik before rolling, or add a little more to the mixture.
  3. Brush one side with a mixture of melted butter, cinnamon, and sweetener.
  4. Gently roll up, place in the center of a greased ramekin, and microwave for 75 seconds.
  5. Top with a lightly sweetened cream cheese and enjoy while warm!
