No-Cook Veggie Spring Rolls with Peanut Dipping Sauce

  • 1 handful mint
  • 2 green onions,  chopped (optional)
  • 14 brown rice spring roll wrappers
  • subheading: DIPPING SAUCE:
  • ½ cup peanut butter
  • ½ cup water
  • 2 tablespoons soy sauce
  • ½ teaspoon honey
  • ½ teaspoon toasted sesame oil
  • 1 pinch red pepper flakes,  optional
