Similar to red velvet, this cake has a mild chocolate flavor and ultra tender texture. The cake is classically paired with a light and fluffy ermine frosting, also known as a boiled milk frosting. It's much less sweet than a traditional American buttercream (it uses less sugar and butter), and it relies on cooked milk and flour as a base. Its name is said to come from the idea that the frosting is as silky as an ermine's white fur.
