Best Vegan Mozzarella Cheese (No Oil!)
Ingredients
  • ½ cup low-sodium veggie broth
  •  
  • ¼ cup dairy-free plain, unsweetened high fat yogurt (Kite Hill almond yogurt is high fat, super thick & creamy. The thicker the yogurt, thicker the cheese. You can also use soy or coconut.) Find at Krogers or Sprouts
  •  
  • ½ cup raw, unsalted cashews
  •  
  • ½ packed cup of cooked, peeled & mashed gold potato (weigh AFTER cooked/peeled & mashed)
  •  
  • ¼ packed cup cooked white rice, not cold from refrig, warm in microwave
  •  
  • ½ to 1 TAB distilled white vinegar-use ½ for mild tang & 1 for extra tang (key to cheesy flavor, don't sub)
  •  
  • 1 tsp fresh lemon juice
  •  
  • ¾ tsp fine sea salt (KEY to cheesy flavor, don't omit or reduce so it stands out on pizza & in grilled cheese, etc.)
