Winter Pasta Salad with Roasted Vegetables
Ingredients
  • 1 small butternut squash
  • 1 crown broccoli
  • 10 cremini mushrooms
  • 2 to 3 cloves garlic
  • Extra virgin olive oil (to toss veggies)
  • Salt + pepper, to taste
  • 2 cups bowtie pasta, dry (or other small pasta of choice)
  • Approx. 24 med-large shrimp (frozen or fresh)
  • 1 Tbsp avocado oil (to cook shrimp)
  • 1 cup parsley
  • 3 to 4 large handfuls baby arugula
  • Optional: ½ cup freshly grated parmesan
  • subheading: Thyme-Mustard Dressing:
  • ¼ cup extra virgin olive oil
  • 2 Tbsp white wine vinegar
  • 1 Tbsp lemon juice
  • ½ tsp dijon mustard
  • ¼ tsp honey
  • 1 tsp thyme, dried
  • ½ tsp garlic powder
  • Salt + pepper, to taste
