Cooked in two 6 quart IP’s on HP
Ingredients
  • 1 Can of sweetened condensed milk..14 ounces
  • 4 Egg Yolks
  • 2 Whole Large Eggs
  • ¼ Cup Melted Butter
  • 1 teaspoon Vanilla Extract
  • ⅔ Cup desiccated coconut ( I used regular flaked coconut)
Steps
  1. Whisk all of the ingredients together..set aside
  2. Add 1 cup of water and the trivet to your IP
  3. Fill each mini silicon cupcake liner ⅔ full
  4. Place six filled liner on the trivet
  5. Close and seal your lid
  6. Set your pot to manual 15 minutes
  7. Do a Quick Release when the cook time ends
  8. Unfold each one when cool enough to handle ( I used my kitchen gloves)
Notes
  • The batter will make 12 mini’s .. I used two 6 qt IP’s
