Thai Grilled Coconut Curry Chicken
Ingredients
  • 14 to 15 boneless, skinless chicken thighs (don’t use bone-in)

  • 1 tablespoon finely grated lime zest
  • ¼ cup freshly squeezed lime juice

  • 1 ½ tablespoons finely chopped galangal (or ginger)
  • ½ teaspoon turmeric
  • 2 tablespoons Thai sweet chili sauce
  • ½ teaspoon Vietnamese chili garlic paste
  • 3 green onions finely chopped (both green and white parts)
  • ⅓ cup Thai or sweet basil, finely chopped
  • 2 tablespoons fresh lemongrass, finely chopped
  • 1 cup fresh cilantro, finely chopped
