Gluten Free Hot Cross Buns
Ingredients
  • 500 g (17 oz) lukewarm water or milk
  • 450 g (16 oz) gluten free flour
  • 115 g (4 oz) raisins or sultanas
  • 50 g (2 oz) sugar
  • 3 tbsp vegetable oil or butter
  • 2 tsp xanthan gum
  • 1½ tsp dried yeast
  • 1½ tsp mixed spice or pumpkin spice (cinnamon, nutmeg, cloves, ginger)
  • 1 tsp salt
  • subheading: For the glaze:
  • 2 tbsp caster (superfine) sugar
  • 2 tbsp water
  • subheading: For the crosses:
  • 100 g (3½ oz) icing (powdered) sugar
  • 1 tbsp water
